Baked Cheese Balls

Servings: 6 to 8 » Preparation: 10 mins + 20 mins to chill » Cooking: 15 mins » Level: Easy
Ingredients:
  • 1 cup (250 g)ricotta cheese, drained
  • 2/3 cup (100 g) whole-wheat (wholemeal) flour
  • 2 tablespoons bran, toasted
  • 2 cups (300 g) all-purpose (plain) flour
  • 1/4 cup (60 ml) exra-virgin olive oil
  • 3/4 cup (90 g) freshly grated Parmesan
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/4 cup (60 ml) milk + extra, as required

Procedure:
  1. Place all the ingredients in a large bowl and mix well, adding enough extra milk to make a smooth, firm dough
  2. Shape the dough into a ball
  3. Wrap in plastic wrap (cling film) and chill in the refrigerator for 30 minutes
  4. Preheat the oven to 400 F (200 C/gas 6)
  5. Oil three baking sheets
  6. Shape the dough into balls about the size of walnuts. Arrange on the prepared baking sheets
  7. Bake until golden brown, about 15 minutes
  8. Serve warm
